Mavromatika (or cornilla) are white beans with a black spot, like a black eye, hence their name mavro (black in Greek) and mati (eye in Greek).
In English, they are called black eyedpeas.
Mavromatika are the most widely cultivated legumes in Greece.
It is a medium sized seed bean with a slightly sweet taste.
They are recommended for people suffering from stress, nervous system disorders and rheumatism.
It cooks quite quickly and soaking in water is not necessary as with other pulses.
However, it is recommended to soak them for about 1 hour.
Delicious in salad with a hint of balsamic vinegar and oregano!
