SMOKED PORK SPECIALTY SIGLINIO FROM MANI
The most famous product of Mani is siglino. It is cured pork meat which is salted, dried and then smoked for many hours with sage.
After the smoking, big pieces of meat are boiled in olive oil along with water and oranges. Then the pieces are placed in tins and covered with port fat or/and olive oil in order siglino to be preserved for longer.
