It is cultivated in the deltas of the Aliakmonas and Axios rivers in northern Greece. It gets its yellowish color from the outer casing during the parboiling procedure, after which the casing is removed. Parboiling involves the partial boiling of the husked rice and is done in three stages: soaking, steaming and drying.
