Harvest: Handpicked from mid-September to early October
Traditional fermentation for 10-15 days in stainless steel tanks
Punching downs every 4 hours during the whole 24 hours to achieve a gentle extraction. Malolactic fermentation
Maturation: 12 months in French oak barrels 225 Lt (50% new – 50% second fill)
Ageing: 12 months in the bottle before release
