WINEMAKING
Skin contact maceration for 4 hours at 8 °C
Fermentation in stainless steel tanks with cooling jacket at 15-17°C
During fermentation, lees stirring (bâtonnage) takes place to keep the lees in contact with the wine and extract flavour, aroma, and texture.
